TRADITIONAL DELIGHTS: CAKES

LAPIS (Order Now)
This traditional cake was introduced to Indonesians in the 19th Century during the Dutch Occupation. A confection that used to be savoured only by the Dutch elite (because of the rich, expensive ingredients and the sheer amount of time and skill needed to bake and perfect each layer), the Lapis is now a widely appreciated cake. Here at Cooking Art, we still bake Lapis the traditional way with our authentic recipe.

Kueh Lapis Spekkoek [A: $35/kg B: $22/kg]
The authentic 12-layer spice-baked lapis. Available in Grade A and Grade B.
Coffee Lapis [ $32/kg]
Freshly brewed local coffee makes this an aromatic tea time snack.
Almond Lapis [ $35/kg]
Ground almond and almond flakes give this lapis a nutty twist.
Durian Lapis [ $38/kg]
Fresh durian puree lends a flavourful creaminess to this buttery lapis.
Pandan Lapis [ $32/kg]
Natural pandan and coconut milk will linger on the taste buds after the last bite.
Prune Lapis [ $35/kg]
The flavourful 12-layer cake is infused with freshly brewed coffee and studded with sweet pitted prunes.
Chempedak (Jackfruit) Lapis [ $38/kg]
Fresh jackfruit puree is mixed into the buttery batter giving this lapis a sweet richness.
Lapis Surabaya [ $30/tray]
The Surabaya lapis is made with the same spices as the Spekkoek, but it’s less intricate with only 3-layers.

Our Durian fudge cake is made of fresh durian-puree fudge with vanilla sponge [$22; 12 cut].
Fresh Pandan Fudge
Fresh pandan fudge with pandan sponge makes up this unforgettable Pandan kaya cake.
Bangkok Kaya cake
Bangkok kaya cake is a combination of fresh pandan fudge in pandan sponge topped with coffee jelly.
